School Canteen kitchens are
organised differently to other commercial settings, as the type of foods
prepared are limited. Service
counters, storage and display spaces are critical. The storage and display of all items sold must be easily and
readily accessible and counter space for busy periods of service must be
adequate. Easy access to bulk storage
items is also very important.
Preparation areas are usually kept to a minimum and placed in the
centre of the room, along with the freezers, for easy access.
Items prepared in School Canteens
include sandwiches, rolls and the fillings, the heating of pies, sausage
rolls and similar items, the making of soups, hot drinks and hot dogs.
