Providing all daily meals for the
residents, commercial kitchens in Aged Care Facilities are organised in such
away as to allow for the most efficient and systematic flow of foods into and
out of the kitchen. Kitchen design
enables staff to accommodate any special dietary or cultural needs a resident
may require. Kitchens in Aged Care
Facilities will have a cook, assistant cook, dishwasher or kitchen hand and
serving staff. The number of staff
will depend on the size of the facility.
Some Aged Care Facilities do not
have a full commercial kitchen but have what is called a Finishing
Kitchen. A Finishing Kitchen is used
when food is prepared in bulk at another site and transported chilled to the
Aged Care Facility where it is stored and finished off (plated and reheated)
before serving to the residents.
