This course is for people who work in the areas of food preparation in commercial catering, including public/private hospitals, community health organisations, childcare centres, retirement villages, school canteens and restaurants.

 

You will learn kitchen skills, how to prepare a range of safe and healthy foods and how to work as part of a team in hospitality and community food services. You will also learn how to assess your own skills and apply to have these recognised.

 

This course provides assessment and learning pathways in line with the national Training Packages for hospitality and community services and health. An elective choice allows you to support food service skills in a range of settings, including food and beverage delivery, cafeteria operations, cleaning and laundry, computer technology and one-to-one job instruction.

 

Career Opportunities:  Cook/food preparer in community services, health and hospitality.

 

Articulation: You can apply for advanced standing in this course, if you have completed the Year 12 subjects Industry Studies and Hospitality and Food Technology.  When you finish this course you can apply for advanced standing in Food Studies (Community Food Services) Certificate III 4501, Food Studies (Community Food Supervision/Promotion) Certificate IV 4502 and Hospitality (Kitchen Operations) Certificate I 4568.

 

 

 

Hospitality (Asian Cookery)

This course is for people who want to work as a cook or food preparation assistant in either the commercial or retail catering industries. You will develop and apply skills and techniques in the following basic methods of cookery as they relate to Asian cookery. Emphasis is placed on practical application of Asian food preparation, cookery and service. You will also learn how to implement food safety procedures, transport and store food.

 

The course provides training to develop these skills in a variety of hospitality settings as the relevant competency standards are common to many areas of the industry.

Hospitality (Asian Cookery - Thai)

This course is for apprentices working in Asian/Thai cookery. It is also for people who want to work as an Asian cook specialising in Thai cuisine in a commercial environment.

 

You will develop and apply skills in the basic methods of Thai cookery with specific emphasis on preparation, cooking and presentation of menu items from Thai cuisine.

 

This course will be replaced in 2002 following revision of the Hospitality Training Package with which it is currently aligned.

 

Career Opportunities:  Qualified cook in any hospitality establishment specialising in Asian/Thai cuisine.

 

Articulation:  When you finish this course you may be eligible to do a range of Certificate IV courses in Hospitality.

 

 

 

Hospitality (Catering Operations)

This course is for people who want to work as a catering assistant within commercial, industrial or retail catering operations such as fast food outlets, coffee shops, take-away facilities, restaurants, function caterers, catering contractors and community food service setting – hospitals, nursing homes, childcare centres, sporting camps and facilities.

 

You will develop skills and knowledge required to produce quality goods and services in the hospitality/catering industry.  Focus is placed on the practical application of catering/hospitality principles such as organising, preparing and presenting food, planning and controlling menu based catering, promoting goods and services to customers and maintaining premises.  You will also develop skills in basic methods of cookery and implementing food safety procedures.

 

Career Opportunities:  Learners who successfully complete this course can seek employment as a junior caterer or similar in a variety of hospitality industry sectors.

 

Articulation:  All units are aligned to National Competency Standards that will allow for direct articulation into any related Hospitality and Hospitality Training Package Qualifications.

You will develop skills and knowledge required to produce quality goods and services in the hospitality/catering industry.  Focus is placed on the practical application of catering/hospitality principles such as supervising the organising, preparing and presenting food, planning and controlling menu based catering, promoting goods and services to customers and maintaining premises.  You will also develop leadership and other supervisory skills including the development of food safety programs, monitoring work operations and interpreting financial information.

 

Career Opportunities:  Learners who successfully complete this course can seek employment as a junior manager or similar in a variety of hospitality industry sectors.

 

Articulation:  All units are aligned to National Competency Standards that will allow for direct articulation into any related Hospitality and Hospitality Training Package Qualifications.

This course is for apprentices who want to become qualified cooks. You will acquire the skills and knowledge needed to operate as a trade cook in a commercial kitchen environment. You will learn about communication, occupational health and safety procedures and workplace hygiene.

 

You will learn how to produce quality foods, plan menus, control costs and work as part of a team in a kitchen/hospitality environment.  Practice skills will be developed for the hygienic preparation and service of a range of meals in a professional manner.

The course is aligned with the Hospitality Industry Training Package (THHO2) and
contains a group of elective modules specific for various industry sectors.

 

Career Opportunities:  Qualified trade cook in any hospitality establishment.

 

Articulation:  When you finish this course you may be eligible to do a range of Certificate IV courses in Hospitality.

In addition you will develop human resource and communication skills for effective supervision, customer service, marketing, sales and team development whilst giving you the opportunity to exercise your own judgement and flair.

This course is for people who want to work in the cookery sector of the hospitality industry in the field.  The course has been designed to offer training as a cook for those who don't have an apprenticeship.  This course does not qualify you as a trade cook.

 

In this course you will develop skills needed to prepare and serve a full range of meals in a professional and hygienic manner.  Hospitality work experience will give you an opportunity to develop your skills in a kitchen or retail food environment.
